  3. 1 tbsp chili powder
  4. 1 tbsp white sugar
  5. 2 tbsp honey
  6. 3 tbsp red wine of choice
  7. 1 tbsp lime juice
  8. 1 tbsp soy sauce
  9. 2 tbsp olive oil
  10. A pinch of black pepper
  11. Chopped cilantro

Green Mashed Potato

  1. 4 peeled potatoes, cut into chunks
  2. 6 cloves of garlic
  3. 1/2 cup Tatua whipping cream
  4. 50g Anchor butter
  5. Fresh English parsley
  6. Scallion for garnishing
  7. Salt and pepper to taste

To prepare lamb ribs

  1. Mix together all the ingredients and rub them into the ribs using your hands. Make sure that it is evenly coated.
  2. Leave to marinate overnight.
  3. To cook, preheat oven to 200°C.
  4. Drizzle red wine over the ribs (optional) and leave to roast for 30 minutes.

To prepare mashed potato

  1. Boil potatoes for 20 minutes on high heat or until soft.
  2. In a blender, add in a handful of fresh English parsley, whipping cream, and garlic. Blend until smooth.
  3. In a bowl, mash softened potatoes, butter, and blended puree until thoroughly mixed. Add salt and pepper to taste.
  4. Garnish.
