Designed around the five foundational flavours - salty, sour, umami, bitter, and sweet - this culinary journey at Nobu KL is as philosophical as it is flavourful. Every dish pays homage to the Japanese principle of mottainai, a gentle but powerful reminder that nothing should go to waste, especially not flavour.

Curated by Executive Chef Philip Leong, the menu reflects a seamless blend of tradition and innovation. Ingredients are used in their entirety, with elements that would typically be discarded transformed into surprising highlights. As you move from course to course, the intent is clear: to show that sustainability is not a limitation, but a creative liberation.

Cold

The cold journey begins with the Tuna Tempura Roll, where delicate slices of tuna are wrapped around lightly crisped tempura for a bite that is soft, warm, and gently yielding - truly a beautiful interplay of contrast and restraint.

This is followed by the Seafood Poke Bowl, where marinated cuts of fresh seafood are elevated by the fragrant nuttiness of sesame oil. Tasty and filling, it is a refreshing bowl that offers both clarity and comfort with every spoonful.

Hot

The hot selections unfold with the Chilean Seabass with Coral Butter, which is cooked until flaky and moist, its richness is enhanced by a creamy coral butter sauce that whispers of the sea, balancing decadence with delicacy.

The Lobster Chawanmushi arrives as an oceanic custard, silky and deeply savoury, where tender morsels of lobster are cradled within a slow-steamed egg base. Each spoonful is a quiet, luxurious meditation on warmth, depth, and umami.
