Honey Roasted Lamb Ribs on Green Mash Recipe
I love Sundays, and I always make it a point to spend them productively. This time around, I have decided to create a recipe using lamb ribs as the main ingredient. Inspired by a dish I've had in Vietnam, I came up with a recipe for honey roasted lamb ribs (sweet instead of savoury for a change), with my creation of green mashed potato as the side.

Honey Roasted Lamb Ribs on Green Mash Recipe
Preparation time: 20 minutes + a day
Cooking time: 30 minutes (varies, depending on the thickness)
Servings: 2-3
Ingredients
Honey Roasted Lamb Ribs
Pure South lamb ribs
6 cloves garlic, coarsely chopped
1 tbsp chili powder
1 tbsp white sugar
2 tbsp honey
3 tbsp red wine of choice
1 tbsp lime juice
1 tbsp soy sauce
2 tbsp olive oil
A pinch of black pepper
Chopped cilantro
Green Mashed Potato
4 peeled potatoes, cut into chunks
6 cloves of garlic
1/2 cup Tatua whipping cream
50g Anchor butter
Fresh English parsley
Scallion for garnishing
Salt and pepper to taste
To prepare lamb ribs
- Mix together all the ingredients and rub them into the ribs using your hands. Make sure that it is evenly coated.
- Leave to marinate overnight.
- To cook, preheat oven to 200°C.
- Drizzle red wine over the ribs (optional) and leave to roast for 30 minutes.
To prepare mashed potato
- Boil potatoes for 20 minutes on high heat or until soft.
- In a blender, add in a handful of fresh English parsley, whipping cream, and garlic. Blend until smooth.
- In a bowl, mash softened potatoes, butter, and blended puree until thoroughly mixed. Add salt and pepper to taste.
- Garnish with scallion.
